Smokey BBQ Rub
Formerly known as the Smokey Pulled Poek Rub, this is a smokey, mildly spiced, dry rub.
Ideal for making pulled pork, enhancing meats, casseroles and stews. Can be used as a taco seasoning, or sprinkle over your potato wedges… you can even add it to your baked beans!
Pulled Pork instructions:
Pre-heat oven to 140C/gas mark 4. Peel 2 medium onions and cut into quarters, pour a glass worth of apple juice into the bottom of a baking/roasting tray and add onions to the tray too.
Rub our Smokey Pulled Pork Rub mixture all over the pork, making sure to get it inside any cuts or grooves – Be very generous with it, this is eventually going to dissolve into the juices and give more flavour for later on. When done, put the pork on top of the onions, and cover roasting tray with foil.
Put tray in middle of the oven and cook for 5—6 hours. Take out of oven and check, if you drag a fork along the top of the pork, you should find it starts to separate pretty easily. Pour half the juices out of the tray and set aside.
Remove roasting tray from oven. Using two forks, start separating the pork flesh. Transfer the meat to a serving dish, and pour set aside juices back over to obtain desired moisture. Serve immediately.
